Slow Cooker Pork Shank

Last year I got a couple of pork shanks and made Slow Cooker Pork Shank and Potato Three Tin Casserole, which was really nice. The other day I saw a pork shank in the supermarket again, this one was a lot bigger than the first two, and would easily serve two people, so I decided to cook this one in the slow cooker too.IMG-20130507-00002

It was actually sunny yesterday, shock horror! I wanted to get out in the sunshine as quickly as possible, so it was basically a case of throwing everything in the crock-pot as quickly as possible.

Ingredients:

Pork shank – 2lb/900g (skin and excess fat removed)

Chicken stock – 1 pint/½ litre

Worcestershire sauce – 3 tablespoons

Red onion – 1 large (sliced)

Garlic – 3 cloves (crushed)

Carotts – 4 medium (peeled & sliced)

Potatoes – 6 small (peeled)

Seasoning – dried herbs, pepper

Equipment: Chopping board, knife, peeler

Method:

  1. Put the chicken stock in the crock-pot and set the slow cooker on high while you prepare the vegetables.
  2. Add all the vegetables, Worcestershire sauce and seasoning.
  3. Put the pork shank on top and season any bits not covered by the stock.
  4. Cook on high for an hour, then turn down to low for another 7 hours or so.
