Last year I got a couple of pork shanks and made Slow Cooker Pork Shank and Potato Three Tin Casserole, which was really nice. The other day I saw a pork shank in the supermarket again, this one was a lot bigger than the first two, and would easily serve two people, so I decided to cook this one in the slow cooker too.
It was actually sunny yesterday, shock horror! I wanted to get out in the sunshine as quickly as possible, so it was basically a case of throwing everything in the crock-pot as quickly as possible.
Ingredients:
Pork shank – 2lb/900g (skin and excess fat removed)
Chicken stock – 1 pint/½ litre
Worcestershire sauce – 3 tablespoons
Red onion – 1 large (sliced)
Garlic – 3 cloves (crushed)
Carotts – 4 medium (peeled & sliced)
Potatoes – 6 small (peeled)
Seasoning – dried herbs, pepper
Equipment: Chopping board, knife, peeler
Method:
- Put the chicken stock in the crock-pot and set the slow cooker on high while you prepare the vegetables.
- Add all the vegetables, Worcestershire sauce and seasoning.
- Put the pork shank on top and season any bits not covered by the stock.
- Cook on high for an hour, then turn down to low for another 7 hours or so.
