Cheesy Mushrooms

Need a super quick, tasty side for a weeknight? This recipe takes seconds to prepare and can be tweaked for personal taste/whatever cheese you have in the fridge!

Ingredients:

Portobello or large mushrooms – 1-2 per person

Olive oil – a drizzle

Cheese – any you have in the fridge, I used a semi-soft blue cheese and a garlic roule. If you use a hard or high fat cheese cook the mushrooms for 10 minutes before putting the cheese on.

Method:

  1. Wash and dry the mushrooms and remove or cut down the caps.
  2. Drizzle the mushrooms with a little olive oil and place the sliced cheese on top. The garlic roule didn’t melt much at all so if I use it again I’ll probably whip it up a bit with a fork and then spoon it on.
  3. Place in a preheated (180°C/Fan 170°C/Gas 4) oven for 20-25 minutes.
  4. Best served with a nice steak and some crusty bread!
