Another delicious low syn but high flavour dish for my Slimming World diet, and this time I thought I’d get the slow cooker out. I love pork and even lean pork is really tasty and moist when cooked in the slow cooker. I’ve made lots of slow cooked dishes using pork filler, like Healthier Slow Cooker Pulled Pork in Barbecue Sauce and Slow Cooker Zingy Sweet Pork Fillet. These recipes are low-fat but not low-syn as the sauces are a little sugary.
This recipe is just 1.5 syns per portion and really delicious and great served with rice.
Olive Oil Spray – 7 sprays (0.5 syns)
Chicken stock – 1 pint/500ml (I used homemade but a cube is fine)
Chipotle paste – 2 tablespoons (1 syn)
Honey – 1 tablespoon (1.5 syns)
Onions – 1 (finely diced)
Garlic – 3 cloves (minced)
Mushrooms – 9oz/250g (sliced)
Pork fillet – 1lb/450g
Equipment: Slow cooker, chopping board, knife, frying pan, wooden spoon, tongs
- Turn the slow cooker on to high and put the stock, chipotle paste, and honey in the crock-pot to heat up.
- Spray the olive oil into the frying pan, add the onions and start to brown on a medium heat.
- When the onions start to soften add the garlic and mushrooms and sautee. Add a little water if the pan is dry.
- Tip them into the crock-pot and return the frying pan to the heat. Brown the pork on all sides before adding to the crock-pot and cooking on low for 3-5 hours.
