Twice Baked Cheesy Jacket Potatoes – Syn Free!

Yes, that’s right cheesy and syn free! There is a slight caveat in that you need to use some of you ‘healthy extra’ calcium allowance, but only a fraction of it.IMG-20130215-01426

These were really delicious. I’m thinking of adapting the recipe slightly, adding lean bacon or ham to make cheesy loaded potatoes.

Ingredients:

Baked potatoes – 1 medium-large potato per person (cooled slightly or left over from the night before)

Quark – 1-2 tablespoons per potato

Milk – ½ tablespoon

Seasoning – salt & pepper (to taste)

Cheddar – ½ oz per potato (grated)

Equipment: Knife, mixing bowl, fork, baking tray

Method:

  1. Half the potato(es) and scoop out the middles into the mixing bowl.
  2. Add the quark, milk and seasoning, and mash together with the fork.
  3. Put the mix back in the potato skins, place on baking tray and top with the grated cheddar.
  4. Bake in a preheated oven (190°C/Fan 170°C/Gas 5) for 15-20 minutes until cooked through and the cheese is starting to colour.
